How can we resist the sheer ornamental appeal of this fruit — the art-worthy exterior and then the jewel-like, ruby-colored seeds within? And if you can’t lay your hands on the fruit itself, how about the juice?

Not only is the pomegranate itself beautiful, its flesh and juice is full of antioxidants and Vitamin C. Plus, it’s thought to offer protection against inflammation, heart disease, and even Alzheimer’s. So should you indulge in this ancient wonder-fruit this winter?

Pomegranate Juice
15 oz artichoke hearts, rinsed and drained 1⁄4 cup chives, chopped
2 tablespoons P∂M P∂MS Fresh Arils,
plus more for garnish All-purpose flour, for dusting

1 (17.5-oz) box puff pastry, thawed
1 egg, plus 1 teaspoon water, beaten Kosher salt and freshly ground black pepper

Herby P∂M Gremolata
1⁄2 cup flat-leaf parsley, chopped 1⁄4 cup mint, chopped
2 tablespoons chives, chopped
1 lemon, zested and juiced
1 tablespoons extra-virgin olive oil

Method:

Preparation:
1 (17.5-oz) box puff pastry, thawed
1 egg, plus 1 teaspoon water, beaten Kosher salt and freshly ground black pepper
Herby P∂M Gremolata
1⁄2 cup flat-leaf parsley, chopped 1⁄4 cup mint, chopped
2 tablespoons chives, chopped
1 lemon, zested and juiced
1 tablespoons extra-virgin olive oil

  1. For the Tart Soleil: Heat oven to 375oF. Line a rimless baking sheet with parchment paper. Add feta, P∂M Wonderful 100% Pomegranate Juice, artichokes, and chives to a food processor and blend until almost smooth. Season with salt and pepper to taste and set aside.
  2. On a lightly floured surface, use a rolling pin to roll one sheet of puff pastry to a 12×12-inch square. Using a 12-inch-diameter plate or mixing bowl as a guide, cut the puff pastry into a circle. Place the round in the refrigerator and repeat with the second piece of puff pastry.
  3. Place one round of puff pastry onto the prepared baking sheet. Spread the feta cheese mixture evenly over the round leaving a 1-inch border around the edge.
  4. Top with 2 tablespoons P∂M P∂MS Fresh Arils. Brush the egg wash mixture around the edge of the puff pastry and place the second round of puff pastry on top, pressing the edges of the circle gently to seal.
  5. Using a 3-inch diameter cup, press gently in the center of the round to make an indentation, without pressing all the way through the pastry dough.
  6. Cut the larger outer circle into quarters just up to the center circle, then, cut each quarter in half to make eight strips, for a total of 32 strips.
  7. Without breaking the pieces off in the center, carefully twist the strips into a spiral.
  8. Brush the tart with egg wash and bake until the puff pastry is golden brown, 35 to 40 minutes.
  9. While the tart bakes, make the Herby P∂M Gremolata: In a small bowl, combine the parsley,
mint, chives, lemon zest and juice, olive oil, and flake salt to taste. Drizzle over the tart and garnish with P∂M P∂MS.
